Fire Lighting for Buners
Making a fire in the Coal Stoves is so easy and fast:

Method 1

  • Put a level fill of smokeless coal into the fire basket.
  • Take half a box of cheap lighter blocks and place them under the fire grate. Set fire to the blocks and leave.
  • When the lighter blocks have burnt out you should see a cherry red colour In the centre of the coal if this is true then leave in no time at all you will have a blazing fire.
  • If no colour can be seen then place the other half a box under the grate and repeat.
  • Do not overfill the coal basket when starting the fire as this will stifle the ignition process wait until the fire is burning and then add more coal.

Method 2

  • Purchase quick-lighting coal bag.
  • Place on the fire grate and set fire to the corners of the bag.
  • When the charcoal is alight fill the fire basket with Homefire smokeless coal.

Method 3

  • Use your favourite boy scout method of twigs and sticks, to light Coal Stoves, once they are burning add bigger logs.

Purchasing Coal

  • You can purchase smokeless coal from your garage forecourt but this can be quite expensive.
  • The best way to get Homefire ovals is to contact your local coal depot which can be found in the yellow pages and ask them to deliver direct to your door step.

How to Smoke Food using Coal Stoves
Smoked Trout is a firm favourite dish and it is quite easy to do if you have a Bushman Burner. A couple of things are needed and are all quite readily available:

  • Lid Grid to fit into the top of the Chimney.
  • An old Roasting Tin with tightly fitting lid or an old Wok and lid.
  • A Grid to fit in the bottom of the Wok or Roasting Dish.
  • A foil dish to put on top of the Grid inside the Wok or Roasting Dish.

Method

  • Cut Trout into sections removing head and tail to save space.
  • Arrange pieces of Trout in Foil Dish placing a piece of lemon inside each section.
  • Season with coarse salt, black pepper and place a blob of butter on each piece of fish.

Cooking

  • Sprinkle 2 tablespoons of Oak Sawdust in the base of the Wok or Roasting Pot.
  • Place the Grid over the Sawdust and place the Foil Dish on top of the Grid.
  • Put on the lid.
  • Place on the Lid Grid with a Hot Fire in the Burner and wait 45 minutes until cooked.
  • For a more smokey flavour, put more sawdust in the Base of the Wok or Roasting Tin.
  • Smoked Chicken also tastes GREAT.

Recipes for Pizza Ovens

  • The Classic Calzone pizza (folded pizza) is easy to make and is ideal to cook in Pizza Ovens. Follow the instructions below to create the perfect calzone pizza.

Ingredients

  • 1 cup Italian Sausage, browned and cut into bite sizes.
  • 1/2 cup Onions, rough diced.
  • 1 cup Provolone Cheese, shredded.
  • 1/2 cup Green Bell Pepper, chopped into strips.
  • 1/2 cup Marinara or Pizza sauce.

Instructions

Roll out two circular sheets of dough, about 14" in circumference and 1/4" thick. Place the first sheet of dough down in the center of the baking pan. DO NOT trim the excess dough yet.

Pour the sauce over one half the dough surface.

Place the calzone fillings over the sauce.

Fold the remaining half of the dough over the filling and over-lap the bottom edge of the dough with the top edge. Moisten the meeting surfaces of the dough with a little water and let set. The first calzone should now take up half of the baking pan.

Place the second sheet of dough over the remaining area of the baking pan. You may wish to fill the second calzone with another filling recipe for variety. As before, fold the top half layer of dough over the filling and moisten the inner surfaces where the top and bottom layers of dough meet with a little water.

Prick the tops of the calzones to vent. Try decorating the tops of the calzones with a light wash of tomato sauce, or, with a wash of herbed, melted, garlic butter.

Press the dough layers together at the rim of the baking pan with a folk or thumb. Remove the excess dough.

The calzones should be baked in pizza ovens for about 20 - 30 minutes
